Our Environmental PracticesCooking is about more than food — it’s about respect!

 

Respect for the ingredients, the people who grow them, and the land that sustains us. At our core, we believe every choice we make in the kitchen should tread lightly on the planet. Sourcing Locally, Supporting Community work with producers who share our values of quality, sustainability, and care for the land 80% of our produce is sourced within NSW, much of it right here in the Southern Highlands. We prioritise independent farmers and artisans within a 20 km radius wherever possible. By sourcing close to home, we cut food miles, reduce packaging, and keep money in our local economy.

 

Reducing Waste. We believe food should be enjoyed, not wasted. We order ingredients weekly, based on bookings, to ensure nothing goes to waste.

Composting & organics: All food scraps go back into the soil through local composting.Recycling & re-use: Everything that can be recycled is — from glass and plastics to cooking oil.Zero-waste philosophy: Leftovers are offered for guests to take home in eco-friendly packaging.

 

Energy & Water Care. We choose energy-efficient equipment wherever possible. Water is used mindfully, with cleaning practices designed to reduce excess. We partner with venues that share our values, from renewable energy use to on-site water conservation.

 

We Educate Guests on where their food comes from and how small, everyday choices make a big difference. By collaborating with local farms and vineyards, we help strengthen a resilient, low-impact food system in the Southern Highlands.

 

Every time we cook together, we’re showing that delicious food can be both joyful and responsible. It’s our commitment to future generations: food experiences that are good for the soul, and gentle on the planet.
